cos, quail egg and crispy burnt pork crackling and proscuitto salad, apple cider drench
fregola, veal, bay saffron and tomato vodka slow cook
dense chocolate and thyme mud cake, with a vanilla whiskey creme centre
menu – serves 4
cos, quail egg and crispy burnt pork crackling and proscuitto salad, apple cider drench
place cos hearts cut in half on a platter. lay 8 finely shaved slices of proscuito on the base, with half cut 8 boiled quail eggs and a crumble of just burnt pork crackling and mixed with shallots. drench the salad with a dressing made of 1 part apple cider vinegar, 2 parts olive oil, 1 teaspoon brown sugar. shake in a jar and drench the salad. sprinkle with fine herbs
fregola, veal, bay saffron and tomato vodka slow cook
in a good crock pot like a La Creuset, cook on 180 degrees celcius, big pieces of veal osso bucco, cups of good tomato passata, 1/2 cup of tamari, 8 bay leaves, 1 teaspoon of saffron, crushed garlic cloves (in a garlic crusher). cook for hours. boil 2 cups of fregola till ardent. strain the fregola and place on bottom and splash the slow cooked deliciousness over the top….delish
dense chocolate and thyme mud cake, with a vanilla whiskey creme centre
in a magi mix blend 1 cup self raising flour, 1 cup cocoa, 1 cup icing sugar, 3 eggs, 1 tablespoon vanilla, 1/2 cup olive oil, and 1 teaspoon thyme leaves. grease and paper 6 muffin basins in a tray and drip the mixture in by half (i always cook extra for testers). bake in 160 degrees celcius and poke one of the extra cakes to test for cooked with a small spike. should come out clean. cool, remove and slice in half across the middle. whip 1 carton of cream till stiff with 1 tablespoon icing sugar, 1 teaspoon whiskey and 1/2 teaspoon vanilla.place inside the split cakes. dust the top with cocoa mixed with icing sugar. sprinkle some thyme leaves on the top on the side.
